This is a breakfast favorite at my house, for my two boys, ages two and four. We like to eat them with butter and maple syrup...
Mini Apple pancakes
Recipe makes 8 small pancakes
2/3 cup organic spelt flour
2 tsp baking soda
1 tbsp ground flax seed
1 tsp coconut sugar or any natural sweetener
1/8 generous tsp Himalayan sea salt or other salt of your preference
1/2 tsp cinnamon
2/3 cup milk (dairy or non dairy)
1 tbsp oil (avocado oil, melted coconut oil, ghee)
1/2 cup very finely chopped apple or shredded apples
Directions
In a mixing bowl add all the dry ingredients together and mix well.
Add all the wet ingredients except apples and mix until just combined. (Be sure not over mix.)
After that gently mix in the apples.
Heat up a non stick pan and make your pancakes!
Just one spoon is good enough to make a small pancake.
Serve with fruit, maple syrup, butter or your favorite topping and enjoy!
